These tasty bite sized, crunchy Pakoras (fritters) make for the perfect evening snack and the best part is they make use of left-over cooked white rice. I can assure you no one can guess that rice is the main ingredient!
You will need:
1 cup cooked rice
1/4 cup finely chopped onion
1 tbsp finely chopped Cilantro
1 tsp finely chopped peanuts
Few curry leaves finely chopped
2 tsp Green chili paste (adjust to taste)
3 tbsp Gram flour
2 tbsp Rice flour
Salt to taste
Oil for frying
Mash the cooked rice until fine. Add the rest of the ingredients and then combine well mashing the mixture to form a stiff dough. Do not add water. The moisture from the rice is sufficient to keep everything together.
Heat oil in a deep pan. Drop a small piece of dough into the oil to check if its hot enough. The dough should bubble up and rise to the top. If the oil is not hot enough the dough will settle to the bottom. Drop more tiny marble sized pieces of the dough into the hot oil. Fry on medium heat until crisp and brown. Make sure its tiny bite size pieces, bigger pieces will not crisp up as much.
Remove from oil and place on a paper towel lined plate for a few seconds to drain excess oil. Serve hot with ketchup or Mint chutney.
